Preheat the oven to 200 degree celsius.
In a large bowl, toss the beets with olive oil, balsamic vinegar, sugar, salt and pepper until well coated.
Transfer the beets to a baking dish and pour water into the bottom of the dish.
Roast in the preheated oven for about 40 - 45 minutes or until the beets are tender and caramelized, stirring occasionally.
Remove from the oven and let cool slightly before serving, Garnish with fresh herbs.
