In a blender, combine frozen pineapple chunks, coconut milk, greek yogurt, honey (if using), vanilla extracts and ice cubes.
Blend on high speed until smooth and creamy, scraping down the sides of the blender as needed.
Taste and adjust sweetness by adding more honey if desired.
Pour into glasses and garnish with pineapple wedge or a sprinkle of shredded coconut, if desired.
