LOADED HUMMUS

Ingredients:

For the Hummus:

  1. 1 can (15 oz) chickpeas, drained and rinsed
  2. 1/4 cup tahini
  3. 2 tbsp olive oil
  4. 1 clove garlic
  5. 1 lemon juice
  6. 1/4 cup water
  7. Salt to taste

For the Topping:

  1. 1/2 cup cherry tomatoes, halved
  2. 1/2 cucumber, thinly sliced
  3. 1/4 cup kalamata olives, pitted and halved
  4. 1/4 cup crumbled feta cheese
  5. 2 tbsp olive oil
  6. Fresh parsley, chopped
  7. Paprika (optional)

Instructions:

Make the Hummus:

In a food processor, combine the chickpeas, tahini, olive oil, garlic, lemon juice and water. Blend until smooth and season with salt to taste.

Assemble the Dish:

Spread the hummus onto the large serving plate or bowl, creating a slight well in the center.

Add Toppings:

Arrange the cherry tomatoes, cucumber slices, kalamata olives and crumbled feta cheese on top of the hummus.

Drizzle:

Drizzle the olive oil over the toppings.

Garnish:

Sprinkle with fresh parsley and a dash of paprika (if desired) and serve.
