In a food processor, combine the chickpeas, tahini, olive oil, garlic, lemon juice and water. Blend until smooth and season with salt to taste.
Spread the hummus onto the large serving plate or bowl, creating a slight well in the center.
Arrange the cherry tomatoes, cucumber slices, kalamata olives and crumbled feta cheese on top of the hummus.
Drizzle the olive oil over the toppings.
Sprinkle with fresh parsley and a dash of paprika (if desired) and serve.
