RATATOUILLE
Ingredients:
- 1 eggplant, cubed
- 1 zucchini, cubed
- 1 yellow squash, cubed
- 2 bell peppers, chopped
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 tomatoes, diced
- 3 tbsp olive oil
- 1 tsp thyme
- 1/4 cup basil leaves, torn
Instructions:
Saute onion, garlic and bell peppers in oil until soft.
Add eggplant, zucchini, squash and tomatoes.
Cook until vegetables are tender.
Stir in thyme and basil.
