Ingredients:

  1. 1 large eggplant
  2. 2 tbsp tahini
  3. 1 clove garlic, minced
  4. 2 tbsp lemon juice
  5. 2 tbsp olive oil
  6. Parsley for garnish

Instructions:

Roast eggplant at 400 degree fahrenheit until tender.

Scoop flesh, blend with tahini, garlic and lemon juice.

Drizzle with olive oil and sprinkle parsley.
