Ingredients:

  1. 3 cups ripe tomatoes, chopped
  2. 1 cup cucumber, sliced
  3. 1/2 cup red onion, thinly sliced
  4. 3 cups stale bread, cubed
  5. 1/4 cup basil leaves, torn
  6. 1/4 cup olive oil
  7. 2 tbsp balsamic vinegar
  8. Salt & pepper to taste

Instructions:

Toss tomatoes, cucumber, onion and bread in a large bowl.

Add basil, olive oil, vinegar, salt and pepper.

Mix gently and let sit for 30 minutes before serving.
