In a bowl mix the honey and chipotle sauce.
Season the chicken breast with salt and pepper.
Pour half of the honey-chipotle mixture over the chicken, coating it well.
Let it marinate for atleast 30 minutes.
Heat a skillet over medium heat and add a little olive oil.
Add the marinated chicken breasts to the skillet and cook for about 6-8 minutes on each side or until the chicken is cooked through and has a nice char.
Remove from the skillet and let rest for a few minutes before slicing.
Devide the cooked rice among four bowls.
Top each bowl with slices of the cooked chicken,Corn kernels, diced avocado and sliced jalapeno.
Drizzle the remaining honey-chitpotle sauce over the chicken and vegetables.
Add a drizzle of sour cream or greek yogurt.
Garnish with fresh cilantro and lime wedges and serve.
